Who says nothing good ever happens on a Monday? Today I arrived home from work to find our nice mailman had delivered the new issue of Cooking Light. The theme of this month's magazine is Start Your Year Off Light. I'm all for this - food can taste good and be good for you, it just takes a bit of effort.
It's been a busy evening so I haven't had a chance to dive in and read cover to cover. I did take a quick peek at the index and at first blush these are the recipes that are intriguing me:
Banana Fluffer Nutters - I have no idea what this (it's in the appetizers/snacks category) but it sounds fun. I like bananas. I like nuts. I like things that are fluffy. I'm sure this will be right up my alley.
Smashed Avocado on Toast. I love love love avocados. I never had them growing up (they were exotic and likely too expensive) but have discovered them as an adult. My Thursday-night indulgence is often sliced avocado with balsamic vinegar and sea salt. So I'm sure this one will be a winner too.
Savory Pan-Fried Chicken with Hot Sauce. We always have hot sauce in the fridge and it's embarrassing how quickly we deplete the Costco-sized bottles. There's just something delightful about the sweet and spicy flavour marriage. This might be the first one out the gate.
Baked Pickle Chips. Oh yes. So right. So so right.
And one that I won't be trying:
Winter Squash and Tofu Panang Curry. I love squash. I love curry. But tofu is just not something I've ever been able to get past. The texture....the way it wiggles at you. No. Life is too short to waste a meal on something you can barely get down.
