Today was another long day at work - 11 hours, to be exact. Which is about 3 1/2 hours more than what I would usually work. (Or want to work, to be honest!) For some reason we've had a flood of requests coming in, as well as some pressing deadlines. Add to that my friend/colleague (frolleague?!) is on holiday so I've been fielding some of her emails. It's been a bit frantic, to say the least.
My original plan for dinner had been a chicken taco salad. But given my late exit from work, that would have taken too much time and we would have been eating at midnight. Not to mention, I really didn't have the energy for preparing something elaborate.
So I turned to a tried and trusted recipe that's quick and easy to pull together - Reuben Sandwiches from Cooking Light. We don't often have deli meat but I make an exception for this sandwich. Everything about it is just perfect - the home-made Thousand Island sauce, the salty pastrami, the slightly bitter rye bread, the tangy sauerkraut and (the best part) the gooey melted cheese. Perfection!
