Tomorrow afternoon we're having a "mini-retreat" at work. This seemed like the perfect opportunity to try a recipe that's been on my radar for awhile - Chocolate and Potato Chip Cookies. Chips! Chocolate! It's like a cookie and a cure for PMS, all in one tasty package!
I used my trusty Fuddruckers Chocolate Chip recipe as a base, and then added in some crushed ripple chips we had leftover in the freezer from Christmas. (Yes, we had to freeze our leftover chips. It was the only way to stop the eating marathon that was December 2013.) The Fudd's cookie recipe is the best one I've ever made - and I've tried a few in my time. Especially when I bake them using convection the end result is perfect - just the right amount of crisp, gooey and tender.
It's not a cookie I would make every time but it's fun to mix it up a bit. I like an unexpected combination of ingredients. The person who first added bacon to a maple cupcake seemed like a madman, until people realized it was pure genius. Delicious, meaty genius! Here's hoping I get a positive verdict from my co-workers on this little experiment.
